You can actually close the game just as the black screen for the cutscene starts and load the game back up you'll be at 1hp with invincibility and can just pound him lol I found that out by accident!
They did the same thing for demon’s souls and sekiro. In demon souls, you can kill the tutorial boss but the next area has the dragon god punch you to death. In sekiro, you can beat Genichiro but he still cuts your arm off.
