For the first inconsistency The Saiyans require the light that reflects off the Moon to transform so thats why Goku was able to tranform with thd light reflecting off the Earth because the Earth would practically be a moon to planet Vegeta because remember its at least 10 times bigger than Earth.
For the second one the Saiyan tail helps transmit the energy into primal power for them so without the tail there is no channel to transmit it to, But Baby was getting zapped with at least 10 times the normal amount(I dont remember the number off the top of the head) directly too his body literally forcing it to transform even without the tail
For the inconsistency with Goku not using Instant transmission in hell it makes sense that Hell would be a fundamentally different realm where no one can escape from because you wouldn't want the people there to be able to easily escape like Cell who also knows Instant transmission, even the hell in Dbs was not one Goku could use his instantaneous movement to get to
Dragon Ball GT honestly isn't a great series overall, but that doesn't mean there is nothing to like about it. The Baby arc was highly enjoyable, almost all the character designs were cool like SSJ4 and Super 17, and the ending was touching in a way that Z wasn't. It's a flawed show that aged better with time.
