  1. At 6:42 — Biochemistry is a subset of chemistry. Biochemists don't know biology. Sorry, but those are the facts.

For a lot of undergrad programs, even the biology major has nearly equal course requirements in biology and chemistry—so a biologist might know both decently well. Biochemistry is biology in the same way that chemistry is geology, physics is chemistry, and math is physics.

  2. the cocoa powder from the store has virtually no fat in it. It is degreased, usually says it in the label, the cocoa nibs are just the broken beans, that have their natural fermented things and fats. To make chocolate you have recipes and ratios of cocoa NIBS and cocoa butter, depending in the ratios youll get a different product, sugar works like a grit, similar to when you tumble rocks to polish them, it helps grind the cocoa nibs to a very teeny size, the smaller the particles the smoother the chocolate, it also has to do with the crystal structures, but thats more complicated, dark chocolate, the good kind usually always has some sugar in it. Latin america was the first place to make chocolate, not like we know it today but including it in drinks, like almost a tea, or food, like mole. The refined process came from europe, during the colonisation of america they took cacao amongst other things, and developed refinement techniques. Spanish chocolate is very thick, not as rich as its french version, its usually eaten with churros and has the consistency of a thin custard. Mexican chocolate drinks are usually spiced and made with water most times instead of milk and its also a bit spicy(with chiles).

  3. Surely you can just import chocolate from Belgium or similar into the USA, or just look for a gourmet chocolate shop?

Btw coffee beans are also similarly gross before they're processed like cocoa beans are…

  4. If Nigel reads this. There is a US patent for synthetic cocoa butter where triolein is hydrogenated. They may add some of that to the chocolate. Triolein is essentially wax.

  5. The physical nature of the Cacao plant makes me picture some weird world of plants from a long time ago that we don't seem to understand nowadays. It gets me wondering about past civilisations and perhaps things that are so different to what we know. Galápagos Island creatures? A sad thought to wonder about extinct plant species and their properties that we will never know. Perhaps genetics will take us in new directions one day.

  6. The japan KFC story is actually really funny. The guy who opened the first KFC in Japan, Takeshi Okawara (who also became the CEO of KFC in Japan), ran a Christmas promotion called Kentucky for Christmas. He knew Americans eat turkey for Christmas, but when asked, he lied and said they eat chicken. There's a great clip of an interview with him where he says "it was lie!" youtube.com/watch?v=flpoEt8zgu0

  7. Google Lysander Spooner and the American Letter Mail Company – Not only did the private market do it for cheaper, the federal government sued their competition out of business and made it illegal to compete with them, which is why UPS and FedEx only ship parcels, and not "mail". Satellites are put in space privately, and you guys don't think the market can deliver pieces of paper? Who do you think made the paper, envelopes stamps, writing utensils, etc you used to create the letter? Who do you think made the post offices, carrier vans, uniforms, carrier bags, etc. The private market. The public school brainwashing was super effective on you guys.

  8. On a serious note: (tl;dr below)
The question you asked yourselves "is this a good podcast" really depends on how you approach it. Throughout the video you were talking through eachother, which objectively makes it harder to convey your conversation to the viewer. On the other hand, people watch these videos, enjoy them, give them likes, and post loving comments. Those people believe this is a good podcast, in the sense that it is enjoyable.

TL;DR: To know if this a good podcast, first you must define "good".

  9. I literally don't order items if it says it's going to be shipped by FedEx if I need it by a specific date. They do most of their shipping now with subcontractors and it has gone downhill real fast.
