Their hunger for brains can represent radicalization, brainwashing, misinformation, and, in the McCarthy era, communism.

I really like the "Came back because they couldn't let go of their regrets" interpretations of undead.
It's just "being kept awake by your worries" to the nth power.
Also, I like necromancers.
It's the opposite idea to the undead horde: The necromancer is a dictaror, he is not part of the "common" undeads.
For me this is the one genre that always got to me besides the brain eating its too realistic like one chemical leak and some “acid rain”,terrifying!😳
Not to mention the universal fear of cannibalism.
I thought they were a fear of pandemics devolving into chaos
