With regards to items: Sample size of two (which is to say comparing my run to yours) but it seems like the items in the chests are always the same but the items dropped by enemies and sold in shops are random.
Also reclassing is pretty much free – If you drop a unit down a class it'll have max class XP so you can immediately class it back up. This can be useful in cases where you get handed a bunch of assassins you don't want.
