Branzino is still a highly valuable fish, Madson wasn't slagging the food itself but rather its lack of originality. Which is clever because it primes the person (Tom) he's about to interview to impress him with original ideas, which is exactly what he isn't after. So Tom managed to somehow not get baited into that and presented himself as a boring, hard working sycophant, which is what Madson was looking for.

To be fair, Tom is pretty much the ideal CEO Matsson is looking for. Shiv / other siblings are too confrontational and obsessed about being the one in charge. Matsson isn't looking for that. He's looking for someone that actually knows the business and is respected but is just a frontman and willing to take orders. Which to be fair is what a CEO should be doing from the shareholders – Matsson being the majority owner. The reality is as amazing as CEO sounds – technically they are just another employee of the shareholders, like any director if the shareholders don't like them – they will be replaced. Only reason the "King" title worked for Logan because he wasn't just the CEO he was the major owner/ shareholder.
4:18 onwards is one of the most genius moment of the entire show. You feel how these sharks like Matsson operate. They are behind doing nasty things while they have puppets and public figures to absorb shit. Brilliant writing and performance.

Tom gives him the dead eye, Mattson picks it up apologizes, Tom realizes Mattson is trying to be respectful about the fact Mattson is saying I cant work with your wife with this I'd rather have you so he says we are meh Mattson realizes tom might be Guy Leans forward and starts being more honest Tom goes back answers honestly and then Tom has the job. Logan built his fortune the same way as Tom as a front man for guys like Josh, Stewie and Mattson. Hence "Logan mark 2" Mattson was born rich, Logan was not. Tom is Logan.
This was almost hard to watch. The things these people make themselves go through. It concerns me that politicians, the rich and media live these lives.
Mattson always said he had something behind that he is interested in doing more than just hanging around. The problem of the Roy siblings is that they aren't really interested in anything except the position. They have no hobbies and passions at all. They even insult people who does. Even Logan was interested in building ATN and collecting artefacts. And Connor has some naive and specific passions throughout the series (aside from politics). Probably that's how they had their connection.
Tom has been the man to beat for several seasons now. He was just outshone by the kids because of their dad. Once their dad was gone he was the right man. Whether you like him or not is irrelevent. He out of everyone scratched and clawed his way to the top through politicking and talent. Logan saw it Maatson saw it albiet for different reasons. If you rewatch the seasons Tom always had good ideas and the kids just shat on him. in the later seasons they always drop hints that Tom is just crushing his job be it at parks, cruises, or ATN. The fact that Tom tamed Shiv (to some degree) in Maatsons eyes was what put him over because he had done what nobody else could.
When Matsson tells Tom about his attraction for Shiv and Tom did not took it personal, that precise moment is when he become the new CEO.
