You've done a good job for your start mate.
Personally I set up a sawmill at least a temp use one, before a tannery as I get it to do a couple planks so I can upgrade the storage building & the hitching post so I can buy another Ox.
Then close it down & move the family onto the tannery until I get more people in. After getting the Ox for 20 I then tend to find the two homes with the largest back yards to put veggie patches in for a bit of extra food. Probably not the best thing to spend it on but I find it helps out just that little bit. Provided it's done at the right time of year lol
