A quick tip: If you hold shift and click on a building, you copy it! Very handy for when you don't want to sift through all the menus looking for something.
I don't think you lost the beer, I think it's just going that fast and being distributed to any delivery stations that stock it. I also don't think your inventory cap matters when you order something. It will just stop being produced in your village, but you can have over the amount of what you stock.
You don't need more horses. It's basically an infinite supply if the corrals have more than 3.
You also don't need so many latrines. One latrine covers the area inside its circle. It looks like you could get rid of a bunch and free up more laborers. Plus there's an Edict that increases the size of the circle by 30%. If you place it in just the right spot, one can cover the circle of the marketplace.
