I think the greatest legacy of Gravity Falls is that it showed cartoons built around mystery, intrigue and a tightly woven story arc that can be fun and entertaining to watch.

Gravity falls is amazing we wouldn't have so many of the cartoons we have today if it never aired
Gravity falls is like the adventure time of Disney, it influenced almost every other Disney show

Gravity Falls really did change things for Disney animated shows. It influenced the style of storytelling for future animated shows in Disney and beyond. It may have even started a Disney multiverse with itself, Amphibia, and the owl house, or at least fans wanting a Disney animated series multiverse, which really hasn't happened since Lilo and Stitch crossed over to other animated shows. Seriously though, fans really do want crossovers again thanks to Gravity Falls.
