As a souls veteran I can say for sure it's all about the build not the level. The levels help of course but if you're walking around with a level 1 stick with no scaling, those levels aren't going to help much.

FYI – Once you Reach NG+ you will find out that each NG Playthrough will grant you more and more Souls.
So, no – you dont need a Trainer for Levels like this, just speedrun through NG Playthrougs and youre gucci.
