Chicken Enchilada Casserole (No Oven, No Baking)



So what do you do with the broken tortilla chips at the bottom of the bag? Here is a great way to use them. Make a โ€œno bakeโ€ chicken enchilada casserole!
Ingredients: 1-2 Tablespoons Butter

  3. I hate to admit it but I have 2 mostly empty bags with small broken bits. I usually wait until they are stale then throw them away. ๐Ÿ˜œ

  4. With salted tortilla chips, I dump the broken ones into a sieve and shake off the excess salt that always settles at the bottom of the bag. That's when I devour those small leftover pieces, LOL. They would never last long enough to go into any recipe !
