Chef Nate’s Reuben Wraps make a delicious weeknight meal! Featuring Swiss cheese, corned beef, sauerkraut, and a zesty Thousand Island dressing, these wraps are golden and toasty on the outside with gooey cheese on the inside.
Ingredients
4 large flour tortillas
¾ to 1 lb. thinly sliced corned beef
12 slices Swiss cheese
1 ½ cups sauerkraut
For the Thousand Island Sauce:
½ cup mayonnaise
3 tbsp. ketchup
2 tbsp. champagne vinegar
2 tbsp. sweet relish
2 tsp. garlic powder
1tsp. onion powder
1 tsp. ground chipotle
2 tbsp. minced yellow onion
Blackstone S.P.G. Seasoning (or salt and pepper to taste)
Directions
1. In a mixing bowl, combine all Thousand Island sauce ingredients and stir until well blended.
2. Lay out the tortillas. On each tortilla, place 2 slices of Swiss cheese, followed by a portion of the sliced corned beef. Top with some sauerkraut and a dollop of Thousand Island sauce. Add one more slice of cheese on top.
3. Roll up each tortilla tightly.
4. Preheat your Blackstone griddle to medium heat. Place the wraps flap-side down and cook for 2-3 minutes per side, turning to toast all sides and melt the cheese.
5. Slice the wraps and serve hot.
