Only Ross is able to make a 1 hr video about an old obscure racing game you've never heard about followed by a bunch of random remakes and you just can't stop watching it till the end, while developing that speed-induced existential crisis.
Super Night Riders was a 2016 low-budget Outrun on motorcycles, and while it was only good for a few hours before you ran out of content, it looks like they're remaking it completely. Anime inspired art and music, 3D, and mostly focused on bikes, but I enjoyed the original project and hopefully they can expand on it enough to get a good modern attempt at a clone.
I think we had a disturbing lack of aliens in Game Dungeon lately. I think Ross has been replaced by an alien and they're keeping the real one locked somewhere so he can't warn us about them.
Actually, now that I think about it… a rogue-like structure for an OutRun type racer would probably make a lot of sense. Someone, that isn't me (as I know jack about programming), should probably get on that. I want to get a mention in the credits at least though.
You can play Outrun in Yakuza 0 in a side mission to defeat some mobster. I couldn't do it, replayed it like 15 times and I could never beat the AI high score. Also you had to watch the same short cutscene over and over and it got annyoing.

Slipstream and Horizon Chase Turbo were both developed in Brazil. Horizon Chase turbo is inspired very heavily on Top Gear 1 for SNES, which was HUGE in brazil back in the day and is still fondly remembered. The reason for the sonic and sega references is also because Sega was massively important in the Brazilian gaming scene back in the late 80s and early 90s. Ross could've talked a bit about this angle, honestly, it would've given more context for the development of both games and their connection to outrun/old racing games. Love the vid tho still.
Speaking of another game with a feeling of an unbroken journey, Einhander has to be mentioned. WHile Ross isn't particularly found of one-hit-you-die shoot-em-ups, it's still a great game that has the same feeling of going from place to place continuously, which added a very nice feeling to an already pretty great game.
A trick for beating Outrun is to switch down to lo gear and then switch up to high a second or so later. Much easier to navigate tricky corners and traffic.

iv never liked racing games really but i enjoy your enthusiasm seems like you cant make a bad game dungeon.
This was simply before my Time but I am really glad that the Yakuza Series includes Arcades, that let me play Outrun on my PS4.

Neon Drive is much more of a rhythm game than an into-the-screen racing game like OutRun; they definitely do pull from the aesthetic though
