As for the battle at sea, you can still do single carrier coordinated strikes when multiple carriers are in a division you just have to select them and launch them separately. I do find multi carrier coordinated strikes to be a bit underwhelming for how long they take to do.
The moment I can put catapults on carriers I start putting them on new carriers and refitting the old ones. It means your carriers don't need to turn into the wind to launch planes.
I haven't seen your doctrine screen recently, but since your 4 and 5 inch guns are generally DP guns, you might want to set the ammo loadout to 100% HE shells. Also, in my experience, my ships go through their AA ammo as if it is on sale, so I tend to go to 250 shells per gun on anything DP.
Redoutable refit: Outch! As far as I understand, there is what I would call a bug with the ammo for tertiary guns. Secondaries get, I think, 150 shells per barrel. The entire tertiary battery gets as many shells as the entire secondary battery gets. So your secondary battery of 2 x 6" guns will get 300 shells and your tertiary battery of 16 x 4" guns will also get a total of 300 shells, or less than 20 shells per gun. So yeah, those 4" DP guns will provide a nice AA defense – for all of two minutes or so.

You could not ready the strike at the end because you did not click the little boxes. Blue is not selected tick in the box is.
