As someone who was playing it blindly, I assumed this too but like you said, they’re just capital ships you can dock after capture. But you can get a look around before you buy them when you are either looking around when trying to capture it from the inside or when you play the episodes you are sometimes in a ship of some sorts like the trade federation ship from the first episode or the steadfast in the 8th episode.
The fact that the death star can actually move without hyperspace still confuses me
