The verticality is NOT new. You could order vertical directions in version 5. You'd first order the lateral, then once set, you would drag it up and down, this is NOT NEW to beta 6.

I would like to see a movie of one of the storylines made using the camera feature.

Hello, I have just been watching and at 55 minutes you are talking about not being able to plot a course on the map for elevation, however I have been able to accomplish this by setting the camera angle horizontal and then you see the small white markers (up/down) on the selected ships plotted course, you can then grab the marker and hold shift to elevate the plotted marker.
Additionally I am very excited for this new update and can't wait to see the cinematic camera in use during battles.
