Even if the fungal infection learns how to infect humans the manipulation mutation would need to learn how to control every nervous system nodes in the human body while simultaneously be able to defeat our immune system and the only thing that can do that is cancer. The fungus just can not do that it moves to slow and relies on the hosts nutrients which immune system actively kills off the infection every second on top of body temperature not being suitable for fungus. This is why the science enthusiasts designing zombie games utilize virus as the pathogen for a zombie pandemic.
