Regarding pierogi – the polish potato and cheese pierogi are made with white farmers cheese (twaróg), which does not melt while cooking. It's more like not-liquidy cottage cheese and adds a bit of sourness to the filling. The addition of pepperoni sounds nice! My grandma actually adds fried onion and bacon to the filling. And no 's' is neededat the end, pierogi is already plural. Singular is pieróg. Cheers straight from Poland! 😊

Being from New York City what is she talking about authentic cupped pepperoni? I have never had NY pizza where the pepperoni turns into cups. That's reserved for cheap trash like Dominos, Pizza Hut and Papa John's and none of those are "authentic" New York pizza.
