I'm surprised you didn't bring up C-vid, which I think has played into the rash (heh) of infection fiction rising up all over different genres lately. I think the trauma from the pandemic, plus people starting now to come back together again after being forced apart, has really caused a trend of exploring infection/cure/society breakdown type stuff.
This isn't meant to be negative btw, just a pattern I've noticed. We are all going to be coping with that trauma for a long time and it's interesting how that manifests itself.

I have a infection au but in my story it fallows shining armor , big Mac, cheese sandwich, spike , and little cheese and their travels to an underground sanctuary where their families are .
The au is called " moonblinked" and the infection goes as fallowed.
The moonblinked phenomenon started after Luna was removed from the moon . Her absence had lead to the moon giving off odd rays of light that causes the victim to become entranced by its light/influence and will become hypnotized monsters . The transformation happens after the infection grabs hold of the pony's special talent and morphs them into a gruesome twister charaiture of said talent.
Luna and Celestia where bother unaware of luna"s importance on the moon so their not evil.
Also I want it to be in the dark of if this is a thing that happened due to nature or if there's a bigger threat of someone in the moon using the darkest of dark majic .
I find it so funny that in most of these au’s twilight is either the first to get the disease or be the worst of the bunch
Long ago I saw an artist named PoorYorickDA(they seem to have abandoned their projects) who created one of the most interesting AUs I've seen in the fandom, it's called "Equestria Divided"
Equestria fell into chaos after the princesses disappeared, and the Mane Six tried to keep everyone together at first just to turn on each other eventually. By the time the story takes place the whole continent is divided and controlled by different factions in a constant etate of war. Very Grimdark, very extensive, felt like a fresh take at the moment it was created. A shame they abandoned the project
It did inspire me to create my own AU that currently it's going to be turned into a DnD campaign( outside of the MLP universe tho cuz my friends ain't bronies like I)

There’s a whole lot of Infection AUs in different fandoms, I’m kinda shocked by how much it’s spread, but not complaining!
There’s Genshin infection content, Marvel infection content, I even saw Peppa Pig Infection content lmfao. Pretty cool to see a trend like this encouraging people to get creative!
