In order to be able to be a good speedrunner and hold the top record you need insane luck and frame-perfect precision.
The difference is that Dream had several runs in a row with impossible odds, while this is just one speedrun out of the ordinary. Any world record speedrun would be incredibly lucky.

The difference between this and dream is that this guy got super lucky once, while dream was consistently ‘lucky’ over a long period of time
Fun fact: the odds you get an unusual from a crate in tf2 is less than .2 percent, and there are literally thousands of unusuals. So considering the time unusuals were released, that's about 3 unusuals every day. Therefore, it's fair to assume that the piglin drops of .5 percent aren't completely bogus.
