I know some people think they should've said "We are Venom", but they did that in the last movie and I think them refering to themselves as the Lethal Protector works on a few levels. To me, it shows how deep their bond has become. It shows that not only has Eddie finally truely accepted Venom as his friend and partner, but also embraced the role of a Hero. Albeit, an Anti-Hero. Who eats the bad guys…. But still, a Hero nonetheless.
