Movie is great fun as a whole but the way they depicted G-force in the big pull is so wrong tho.
G only occurs as the plane pitches up in relative to its current direction of motion. Even if they are climbing a steep angle, once the plane is level (in relation to the cliff) and no longer changing nose direction abruptly the G simply draws back to 1G.

Listening to actual pilot chatter, you would likely never know when they were actually nervous.
It kinda pays homage from the first movie that Rooster slows down, hesitating then just goes. Maverick did the same thing in 86, disengaging because he freaked out.
