No third stage evolutions are available in the wild, except at shrines, but even then they're never Luma and can only be caught with a TemCardX. Of second stage evolutions, two are only available as second stage evolutions (Babawa and Sparzy); of the rest, excluding Tuwai's evolutions and Anatan, 26 can be found in the wild (including fishing for Piraniant) while the other 29 cannot.
Fiery Soul has the same priority as Aquatic Whirlwind, so Aohi was presumably faster due to its higher level. Gyalis on the other hand is just really fast – 229 at >> Priority just manages to outspeed 152 at >>> Priority.

Little John, on whom Little Jane is presumably based, was 6'6". I doubt Jane is quite that tall, but still…
