This is such a fun gamemode! The racing idea could still work, but it should be that the normal cars that are able to cut through the racing area, while the infected has to follow the route strictly.
persuit race could work, space out round the track evenly, countdown goes off and race. all cars circulate with only the infected allowed to respawn but must follow track. rest try to avoid damage and stay infront.
In the start of the video you touched that one guy twice and he dident get infected??
