Strawberry Rhubarb Jam

Strawberry Rhubarb Jam

2 cups mashed strawberries
2 cups diced rhubarb
5- 1/2 C sugar
1/4 C lemon Juice
1 box regular powdered pectin

Put fruit and lemon juice in a saucepot. Bring to a boil. Cook a couple of minutes until rhubarb softens. Add sugar and stir in well. Bring to a rolling boil. Boil for one minute. Add powdered pectin, stirring well. Bring back to a rolling boil. Boil one more minute. Ladle hot jam into hot jars, leave 1/4″ headspace. Clean rims, place two piece lids and process in water bath for ten minutes. Allow to seal and cool on sideboard wrapped in bath towel.

  2. That looks yummy 😋 but then anything with rhubarb is. I freeze alot 26 four cup bags this year. When I make a batch of cranberry rhubarb sauce in January it a nice treat. Thanks for sharing

  3. I had this way back in the '70's when I was a kid. My great aunt made it. Sure brings back memories! I worked up 7 quarts of greenie beanies just this past weekend. Not a shabby start to canning season!
