You dont want to abandon the CR system. Unlike 5e it works. Most of the time it will matter and you certainly should balance enounters as the book is balanced for 4 player of correct level.
1:55:00 yeah alkenstar is very fight based AP, Strength of Thousands is more roleplay focused. Honestly I would make the gnoll like you did but would not make him be a fight help NPC , just someone they can roleplay and help to make a friend.
So players dont have to heal to full usually 10 min break is enough and trivial fights dont need rest. Of players push on knowing thy are too hurt and should rest longer thats their fault.
If players are a bit damaged its fine. Players can handle any number of trivial 2 or so moderate and like 1 severe before needing like full rest. If 5 players wreck your encounters you should balance the enounters by adding enemies, as fights are best when there are equal number of enemies on both sides.
This was said my Mark Seifter the main math balancer dev at paizo, though he has gone to roll for combat now.

Remember that the difficulty such as low or moderate in events of book are based on a 4 player party of correct level.
