I would argue that racism depicted in western RPGs is more European (French vs. Germans etc…) in construction as opposed to the more extreme stuff in Eastern RPGs.
There are exceptions of course.
FF Tactics is interesting because a lot of it is about the wealthy and powerful being paranoid about the poor and treating them as less than human, not because of race or magic stuff, but because they're poor. I feel like that's pretty unique for an rpg.

Constant offshoots is also the anime studio story. It's basically impossible to find a successful studio that isn't some offshoot of another. Basically only doga kobo and kamikaze douga. Shout out to Toei Animation to Mushi Productions to Madhouse to Mappa for keeping the M going.

I actually do a combo of pick who you think looks cool and try out multiples. I know there's usually more than one character i want to play when I boot up a fighting game.
I was wondering like wouldnt you try all the characters in training mode to see how they feel before jumping into a match so you'll if you enjoy it? Also what if the character you think is cool isnt fun to play?

ff16 hit on certain specific racist story notes that when i first experienced them i knew exactly where they were pulled from and was shocked and a little worried because that whole mess was popping off not too long ago. it's great ff16 hits at real world examples, keeping them fresh lest we ever forget, but my first reaction was "goddamn final fantasy, chill out. that fire is still smoldering"
SF6 is really the only game I've played where "Just play everyone" is good advice, 'cause every single character is fun to play. Most of the time, you're going to end up liking half the roster or less, and usually just one character.
I always do the play every character thing even in league and marvel rivals D: I never get burned out from it and it lets me know what the ops can do by the time I find my main
BioWare wasn’t form Interplay people. I’m pretty sure the two Doctors that founded BioWare never even worked in the gaming industry before starting their studio. They did have a publishing deal with Interplay, but they were always their own studio. Obsidian on the other hand was former Black Isle developers from Interplay, and before them the Fallout team (during development for Fallout 2) left to form Troika Games.
I think the "play every character and then pick which one you like most" should be " play around until you find someone(s) you like playing", and it becomes significantly better advice.
However still not as good as "pick a few characters who look cool and learn them"

I would also add that Japan has… some historical issues with racial tensions. Not only does their media tend to have some very interesting views on literal Nazis, but they also have a tendency to mix the fascination with evil organized religion with certain real-world groups. Just think about how many games have a conspiracy around Totally Not the Jews which is intended to be on their side, but feeds into antisemitic conspiracy theories. Valkyria Chronicles and Triangle Strategy are super bad about this. Or 13 Sentinels having the literal Imperial Japanese military walking around talking about the war in neutral terms, which probably wouldn't fly if a German developer had multiple Hitler Youth in full uniform and never addressing that they're, you know… Nazis.
There's also the real world examples of Japan still not being super cool about acknowledging they were a fascistic ethno-state that routinely performed Mengele-style experiments on the Chinese and Koreans (which they wouldn't even acknowledge as human, and used terms such as "logs" or "sacks" for) not that long ago. Or how there's still incredibly strong anti-Korean sentiment in Japan, and those Yakuza games hit very different knowing how many people of Korean descent have been racially bullied out of public spaces (if memory serves me right, this even extended to a Korean-based vocailoid).
I swear people have the biggest blind spot for Persona / Metaphor. Basically every theme they ever bring up have been done before and better in other JRPGs. Their popularity just confuse me. Metaphor's is so poor, overdone and above all uninteresting I couldn't finish it. I could deal with the middle-school level anti-racism plot if at least the characters were funny/interesting/likable but they couldn't even manage that. With the level of praise it's getting I was honestly shocked how bland it all was.
As usual these guys are incapable of understanding nuance, at least when it comes to games. In a fighting game, pick 1-3 characters you think look cool and try them out in training or combo mode. Then take the one that "feels" best or has the game plan that you vibe with.

If you try all the characters your going to start with the ones you like. Or you don't like yourself. It's totally fine. Fighting games are NON STOP HOMEWORK. That's why there are ranks. You can suck and enjoy sucking because there are other sucks who enjoy sucking too

Killing other people's Bearers on a whim like that was weird, especially when non-Bearers are never portrayed like they're having "fun" treating an enslaved minority like garbage. They're always unusually angry, no trace of apathy, fear, or even pride which would have given interactions some depth. It feels like the game didn't know how to approach the subject of racism so the devs presented it in the flattest way possible. There aren't even worldbuilding elements around it like religious doctrine, recorded history, or policies justifying why Bearers have no place in society even as a slave class. The only reasons Clive learns is a censored history book that never saw the light of day in years and a giant crater that barely has any explanation in-game.
I hate to say it, but David Cage's Detroit had better world building with its racism. That game at least established most humans hated androids for taking their jobs. And as you said, Metaphor was a lot better with themes of prejudice as the protagonists do try confronting it.
