Not sure if anyone else has commented this, but Rosy likes Condensed Power Stones, and if you have any duplicates of the chips used to program her, she likes those as well. If you buy the three at Eufaula Salvage once a week, alternating with the Condensed Power Stones you might be able to avoid the diminishing points for gifts. I have avoided most of the loved gifts because I don't have many duplicates of those, though if you don't mind running The Breach in town a few times she does love Condensers.
I have been trying to rush friendship with Rosy to see if she can attend weddings as well.

About the marriage thing you mentioned, I confirmed your worries by watching other players vids who uploaded their wedding vids that as soon as they propose, all soulmates/bf/gf status changed to adversaries and then they all sent you heartbreaking breakup letters. So yeah, you might wanna hold it for a bit more until you've seen the other three candidates and truly satisfied with your one true choice.
