wait for the rollers to roll at you then block with your shield to make them vulnerable
The rollers are weak to pickaxes. So if you have trouble taking them on, try using a pickaxe on them. Have not tried on sand rollers, but the regular ones take more damage to them from what me and my friends found out

Hey, I'm pretty sure the Village Rating can only increase and never decreases when you remove stuff, so from my experience you can just place one grill for example, destroy it, replace it etc. and rating will keep going up, if you're low on resources and can't make multiple.
This was tested within hours of the release tho, so might be some unintended day 1 jankiness.
