You should include a warning about the garlic and oil causing botulism if stored longer than a week

I like the sandwich series the most, because of his pronunciation of the word sandwich.
You should try this without peeling the peppers. That char you are removing has tons of flavor. It's like cutting the char off a steak after grilling it.
