Crimon Tide. It's tight, fantastic dialog driven suspense. It's not really a military movie, it's a character drama on a US submarine.
I'd recommend that you spend some time on the YouTube channel SubBrief. A former US Submariner hosts the channel and discusses current and historical naval news through the lens of his experience in the silent service.
Baltic sea is not the place for nuclear subs or carriers.
Sometimes it feels like youtube and even Caps own viewers have something against him.

They detected the torpedo launch and returned fire on that bearing with a search pattern.
Turning your back on torpedo as submarine is a bad idea: you can't hear the incoming torpedo because of your propulsion (it's "in the baffles") and you expose the noisiest part of your ship to torpedoes' sonar. Also: You can shadow enemy submarine by moving behind it.

Hi Reapers just wanted to let you know that your idea for this is actually how Britain is apparently supposed to defend against a Russian attack on the uk the Royal Navy was supposed to act as a defence screen, unfortunately because of labour defence cuts the navy is now too small to attempt this doctrine, in fact it barely has enough surface ships to form carrier defence groups for both carriers, at on time upto the 80s there was a limited land based air defence network in the uk which has long been scrapped, as has most of the nuclear bunker network, most of which are now derelict of under other owners (some even used for illegal activities like growing things 😮

A huge reason for the Soviet subs being louder was their deficit in fine machine tools and associated machining techniques. The CNC milling revolution meant our props and everything between the prop and engine were much more finely machined, balanced, and CAD designed.

You were asking about how subs identify different sounds. I feel that the old game Dangerous Waters had a sonar station where you can see different wavelengths of different ship sounds. The game also show noise intensity. Submarines usually had a very different but difficult to hear sound. Towed arrays hear mirrored sound and the way to negate that was to turn the sub and see which contact stayed put.
Subs don't have to surface to operate radar, Radio, or other ECW stuff. They can raise the mast or periscope while the sub stays underwater and operate those functions. The masts and periscopes aren't stealthy last I heard, so they could be detected, but the body of the sub wouldn't break the surface.
