Brok being blue was explained in the first game. Atreus asked why Sindri wasn't blue as he thought all dwarves were after seeing Brok. Turns out Brok is only blue from working too much with silver without ventilation. Basically he's like those people who drink colloidal silver and become real life smurfs.
