As mentioned at the start I'm hesitant to call this 100% because I fully expect people will discover hidden secrets in this game for years to come, especially in the open world portion, however this series will cover every trophy you need for your platinum while making an effort to cover all of the weapons, spells, and other items that can be found throughout the world.

It would be cool if there was a stagger bar visible on enemies. Maybe not all but like mini bosses and bosses would be cool to see that like you can in sekiro.

I've come across that guy in the pot in some tunnels so I assume that's why he was gone when I went to the location you met him stuck in the ground.

Tbh and this is only a side opinion I think the samurai is the better quality pick, it is for me, most broken weapons endgame are dex based atleast the ones I found so starting off a with extra points in dex and the longbow for free which for new people struggling , that bow lets you cheese the tree sentinel to half HP as it is with just the starting amount of arrows. That being said its sort of a different way to look at early game classes.
Anyways thanks for the guide now I can find out what I happened to miss during my time through the areas.

I would say that you are more thorough than the wiki but at this point the wiki is watching your walkthrough, trying to find out where to get certain items.
