The Grafted Scion is easily the most difficult tutorial boss in the Souls inspired games I have played. He has ridiculous range, multihits, and changes his pattern based on what you do. That said, this is the safest method I could come up with to help people beat him here. This fight wouldn’t be so bad if you could actually practice it without having to restart every time.
If you want to speed the fight up feel free to roll.
I do not recommend punishing his jump attacks, as he has a nasty habit of cancelling into recovery and hitting you on your escape.

I noticed you were hesitant to punish the move where he jumps up in the air and you run underneath when his weapon was buffed. Were you getting hit on occasion?
There really aren't that many opportunities for punishing this guy.
Enjoying the ER content, this game is sick, and I’m so happy you’re showing how to be really good at the game. Currently on my playthrough I’m on Godrick the Grafted. He’s not the worst, I’ve been consistently getting him to phase 2.
Could you replay this encounter by quitting out prior to the fight and managing the save file so that you can copy it back over if you lose?

That was well done. I had a feeling that you weren't supposed to beat that boss. It's fantastic that it's possible.
