Still watching so dunno if anyone mentioned this already. The reason why you fight Radagon instead of Marika is revealed during brother corhyns questline and it turns out that Radagon and Marika are the same person. So technically you fought Marika.
Just finished the game too, not sure if its my favorite but its on the top 3 fromsoft games with bloodborne and sekiro. The visuals and the enemy designs are just awesome and the open world works surprisingly well. Also the one of my favorite boss fights you didnt do; Mohg, Lord of Blood (different from the more simple version in the sewer)

I friggin love the Godfrey fight. He is basically reverse Ludwig. Starts out as an honorable knight and then he becomes a wild beast in phase 2.

The Dragonlord Lobos. He is a very hidden boss at crumbling azula, hes worth a visit on one of your playthroughs

Do you feel that this game is easier or more accessible than other Souls games? I am not sure I agree with that stance. Just curious others takes.
I must say, the death rune ending is allot of effort just to give you rain O.o.
Now imagine this fight at 15 fps on a ps4 pro. I felt no sense of accomplishment after beating it.
