How do you "alter" armor sets? I know I've come across something like "commoners headband altered" in my game but this video is actually the first time I've seen it mentioned otherwise

The beast champion is what I wear but I find the hat or helmet just pretty ugly but unfortunately no way to change the lock of it. The rest of the set looks good. The banshied knight set also one I wear it looks good across the board. Even better the alternate version.
