I think the difference isn't that the old time Sorcerors knew less but we're trying to keep a level of distance from the curse energy. There may be a downside to using techniques that force you to be drenched in curse energy. Certainly it would follow using the power of negative emotions should have a profound effect on a user. But I guess time will tell

So the concept of Jujutsu Sorcery is technically a new one in the eyes of world and hasnt been around for that long compared to everything else. So its another idea that isnt widely accepted partially because of how new it is compared to everything else.
With how brilliantly this Story is coming along im 99% there is still an overarching Twist coming in regards to how curses & cursed energy works and came to be – JJK is Top Tier ❤
