We fry our pommes Duchesse in oil, i love the greasy taste of brown fried Duchesse. The Belgian way.
The key is the thoughtfully drained potatoβs. Looks spectacular, and I bet they taste every bit as good, too!

He's up and he's down.
You can use lots of butter and cream to make proper mashed potatoes for this if you use red (Mb red!) potatoes not white. I don't know why chefs like white potatoes (gold are worse!) and never use red potatoes when they are so much better for mashed potatoes and taste a lot better as well!

Made these today with my grandson. Unable to pipe so rolled into "sausages" then joined those to make "doughnuts". The look was amateur but the taste was totally, totally DELICIOUS !!!
White pepper tastes worse than black pepper. I don't know why people obsess over the color of the pepper even at the cost of the food's flavor.
