  2. You can use lots of butter and cream to make proper mashed potatoes for this if you use red (Mb red!) potatoes not white. I don't know why chefs like white potatoes (gold are worse!) and never use red potatoes when they are so much better for mashed potatoes and taste a lot better as well!
