I enjoyed playing this game a hell of a lot but… I never went after the final boss. Too cowardly. LOL
Hag is my number 1 pick for hardest boss (not counting Countess) because it doesn't matter how good you are at the game, if the pot drops your hero right before the hag's turn, she can meat tenderize you on death's door, which can end in a heroes' death without any kind of counterplay.
There is also no way to manipulate who get chosen to get thrown into the pot, like siren with debuff resist, and no way to anticipate when you are getting out of the pot and/or when is her turn coming because of her higher than average SPD.
Shambler is BS in Bloodmoon specially, but you can anticipate when to find him and just dodge him with torches, and if things go wrong, you can just leave the dungeon; the window of safety for the hag situation is non-existent and RNG reliant in comparison.
Shrieker imo is irrelevant, you don't need to kill him, just the nest, and you can just go with 4 DMG dealers and use the shieldbreaker aegis tokens to avoid death on heroes.
Swine Prince is also another boss who can be easy with just an arbalest and a flagellant, just use flare (as you said) to clear marks and then you use suffer from flagellant if your arbalest get stunned.
Swine King must be the deadliest, I actually lost three characters to Wilbur
I'm not sure why flesh is considered almost as safe as siren, crew, and necromancer, for some reason I've lost the most people to flesh out of any boss, and that includes dlc bosses. In almost every playthrough I've done the flesh seems to crit every other action or every action, my most recent stygian playthrough (it wasn't bloodmoon because it had been a while and I was getting used to the game again), the only character I lost the entire run (besides to the final boss because I was playing without dlc so no man at arms crystal drugs shenanigans, plus I had deaths to spare) was to flesh, and I learned just how hard flesh is without flag, there are basically no good healers for the fight without flag, and battlefield medicine, while really good, just doesn't do enough and you don't want to spend 2 out of 4 actions of your people just trying to keep on top of everyone's hp, or you can burn down the flesh and risk losing someone, and the bone always ends up trying to chain stun my pd (and also it just criting pd with undulating invasion which can just bring your back row to death's door in a single hit + blight so when their turn comes around they die to the first death blow check)
That was a bit of a rant, but there is no lost love between me and flesh, it feels like no matter what I do I risk losing someone unless I bring BOTH flag and pd, or even shieldbreaker is really good in this fight, but since I wasn't playing with the dlc my most recent playthrough I didn't have those options and it was very frustrating and dangerous to be crit with dots and stuns and damage all the time (:
