Great list!! A lot of cozy game lists have very similar titles on them, but you introduced me to several games I've never heard of before! Thanks for sharing!
I played one today that's a bit out of the box for a "cozy" game: Citizen Sleeper. It's a cyberpunk narrative RPG inspired by old school tabletop games set in a run down space station where you play as someone who's no longer human, essentially an AI in a synthetic body. It's got this somber, chill atmosphere to it that reminds me a lot of Va11-Ha11a, the artwork is gorgeous and the music really sets the tone for the game as well.
One I like that you may not of heard of is Sumire. It is a short story and has a couple of puzzles/games along the way. But it has the prettiest art style. Worth an afternoon to play and you can often find it on sale being an older release now
