ETA: Osmium essence is a GREAT money maker. You'll need it to upgrade your net and fishing pole to the final stage, but you'll also need a lot of cash. I ended up selling a lot of the osmium essence first to get the money, and then gathering more to upgrade the tools. 🙂

The reason your fruit "tree" died, is because it isn't a tree, but a fruit "plant" that looks like a tree. They last for two seasons, then die. There are fruit trees that will not die, but your level isn't high enough yet to get them…I think. You might want to take a look at the general store to see. There's three types of produce that you can plant: crops (which are your seeds), fruit plants (seedlings), and fruit trees (saplings). That's what the Lab upgrades are about, by the way. You can also upgrade your hay for better quality animal produce there.
Congrats on finishing the gold kelp zone! Now onto the osmium kelp zone (which I absolutely love (the soundtrack in that zone is killer!)). Yes, getting your scythe to gold will help, and if you get it to osmium you'll be even better off (you'll only have to strike the trash once to collect it!).
The dehydrator will be used for your ocean foragables, which will increase the energy amount to higher than what it is when you consume them raw.
The trees that take 4 spots die at the end of each season and will grow in the greenhouse in the future. The trees that only take 1 spot, like Apple, will reamin all year but only grow outdoors.
