you actually can change freighter color a lot it just doesn't visibly reset until your make it warp to a new system or back in i think, you can check things out in more detail by simply looking at it within your inventory though
Freighters are probably the buggiest feature of the game for me. Still can't build much in my first freighter. In other saves I still have frequent bugs and weirdness. I like the convenience of a mobile base but I use the inside very minimally.
Many times I've had the whole base disappear. I enter the bridge, turn around and I'm looking at open space. I've fallen through the floor into space multiple times. I've had the base reconfigure itself multiple times after reloads. I never know what I'm going to find going on with my freighter base.
Forget about freighters and multiplayer unless you want a broken save and all sorts of bugs and weirdness. Never invite a friend onto your freighter and warp unless you want your game file broken.
