There's a fish called a Snake Head. Which is similar to a bowfin but supposed to taste better

We've always called them Dogfish in the Midwest. They can be out of water for 10 hours and still be alive. Put them back in the water and swim away like nothing happened.

There alot better smoked I use a brown sugar and salt mixture to cure it in for at least 30 minutes to an hour first but make sure you rinse it before you smoke it

Bowfin is the most common name. Mudfush around here (SC). The best description I have heard of texture is a fried cotton ball. Now pretty much any fish works for a fish cake but honestly for eating the time spent getting that one fish could have filled the livewell with crappie. Mudfish are hella fun to catch though and I'm not above targeting them catch and release.

I fillet and cut all red and yellow out of my bowfin. Don't wash it, just pat it dry with paper towels. Believe it or not if you keep it alive till you ready to cook, and don't add water to wash meat off the texture will improve from the way you experienced it! I like to fry in a cornmeal/ flour breading myself.

Im from SC . They good. Cut in bites size. Corn meal salt pepper. We eat them all the time. Next time use a white zoom worm.
