Could be port blocking stopping your programme updating – make sure the port it uses is open.
Had the same problem, restarting computer helped, just this. When I turned it off and came another day it did not help, but restart did. Oh and you have to have downloaded the mod that keeps al of it updated and if it would not want to work, it´s because it has been updated, so just restart again and it works.
OMFG.. Do you not have a single mod or someone that knows a bit more? If disabling windows defender and bitDefender is not enough(usually the case), then just exclude the directory. Hours for something simple like that? Ufff… Ask in your discord, 100% there is couple of guys who know what needs to be done. Also Im running already for more than 20yrs without antivirus xDDD Most of them are useless and the others just take too much reso from your PC. As long as you know where or what you are clicking, its fine. ISPs, routers, VPNs and even browser plugins will provide you with enough security, as long as you are not dumb and do not click every shiny thing. xDDD
