I used to build five base layers for my main settlement building with alternating limestone and clay bricks, then put another brick wall one tile out to absorb trebuchet shots. On hard difficulty, the attackers would spend the entire raid smashing through the outer wall and all five layers within. They never seemed to run out of ammunition like they do in normal diff. The tile floors and all the workstations and materials within the building would end up completely smashed on the side of the building facing the trebuchets. The old style trebuchets were completely over the top OP. Glad when they offered the option to switch off trebuchet attacks in the UI.

Re beds, should you find yourself short of straw in future playthoughs: I'm pretty sure there's a variant to the most basic hay sleeping pallet that can be made from sticks instead (although that doesn't sound particularly comfortable….).
