Development for some platforms is probably easier than others. For instance, to get started on Linux, all you need is some hardware, because the OS and basic development tools are all free. If you want Mac, Windows and Linux, then you could perhaps start with an x86 based Mac and then install Windows and Linux as VMs. It might not even directly be Pizzamon's decision though; maybe they've chosen to use a library that's not available for iOS because that library's developer decided that it wasn't worth their while.
