Today, Broken rice is one of the popular dishes and is considered a part of “Saigon culture”. The popularity of the dish is so great that there is a popular metaphor that says: “Saigon people eat Com Tam like Hanoians eat Pho”.
In March 2012, a CNN article commented that broken rice is an attractive popular street food. Also on August 1, 2012, the Asian Records Organization recognized the Asian record for culinary value for Saigon broken rice and nine other Vietnamese dishes.
Although broken rice can have many different ways of processing and reducing, a traditional plate of broken rice usually has the following ingredients.
Broken rice – As the main ingredient of the dish, broken rice is the broken pieces of rice in the rice field when drying, when transporting or when sieving broken rice grains, ie broken rice grains. This rice is often considered a by-product rice, spilled after sieving, often used to feed chickens or people to eat when they are too needy.
