A little tip when baking any type of bread or cake – as ovens vary with temperature control, you should always undertime by about 5-8 minutes & then check with a toothpick or thin (butter) knife. If it isn't quite done then keep checking every minute or two. You want to get it out of the oven the instant it's done so that the cake (or bread) is moist and not dried out. And yes – when doing a layer cake, bottom layer round side down so that flat side is up, & top layer round side up – flat side to flat side.

  3. Very nice video. On the cake, that extra 10 mins was too much. The cake center should be a little bit gooey. That is the bit that you are missing, the gooey center. It makes this cake.

  4. It would be a travesty to use anything but rich, dark chocolate icing on a devil's food cake! So good choice you made there. I think it would have been better with darker chocolate in the icing. White/buttercream frosting should be saved for white cakes, spice cakes and maybe carrot cakes.

  5. Devil's food cake is traditionally (in my neck of the woods) served with a chocolate fudge frosting. Basically as dark as the cake itself. You could also try a genache with 65% (or so) cocoa chocolate and, once it cools, beat air into it to make it more spreadable.

    Hint: when you are adding eggs do not break them into the batter. Break them into a separate bowl and beat them with a fork 40-80 strokes. Then add the beaten eggs to the batter. This makes for easier and more thorough incorporation.

    Hint 2: one might try starting the cakes in a cold oven to lessen doming (make sure to grease the sides of the pan, too) or, if heavily domed, slice the dome off to get flatter sections. The domes then become cook snacks.

    Hint 3: remove the cake when a toothpick inserted in the middle comes out with just a few crumbs, Clean and it is over-cooked, streaky it is under-cooked. Remember, the cake continues cooking after it is removed from the oven so one needs to remove it before it is done. Let it carry over cook for 10 to 15 minutes then remove from the pan to a cooling rack.

  6. That looked like a lot more than 3/4 cup of cocoa – that looked like 1 and 1/4 cups! And you made it heaping, not level. And that should be regular cocoa, not Dutch processed. Most Devil's Food cake recipes use a mix of vegetable oil and butter. Why would you need all butter plus sour cream?

  8. When I was young, my parents used to try different types of dinners and some became our favourites and carried on even after my parents divorced. My dad had the cooking bug after that and carried on to find some really good home favourites and those were the best times I'll always remember.

  9. This will astound you, but there are many condiment items that, when used in very small amounts, make the taste buds hypersensitive to certain other major flavors. If you make a 1 to 1.5 kilo meat loaf and mix in just ¼ tsp of Marmite or Vegemite, it will taste like you use prime aged ground sirloin instead of budget ground beef. Similarly, a tiny amount of Tobasco Sauce will make chocolate baked goods erupt with the flavor and aroma of the chocolate; you would never taste 8 to 10 drops of Tobasco in the batter, but it would make your Devil's Food cake recipe capable of corrupting the Pope.
