I think that some of the potions on your list are not just difficult to brew, they have expensive ingredients. Making them harder to aquire, not brew

Elixir of life wasn’t difficult to make. The philosophers stone was. The properties of the stone were easy access to the elixir and the ability to turn any substance to gold. The difficulty level of the potion had nothing to do with why there was only one stone because the potion isn’t a consideration in the creation of the stone.
