I can think of a lot of monster tamer games, but the only one I can think of to add to this list is Siralim Ultimate (fourth game in the series). It's based off of Dragon Warrior Monsters, and has 1200 monsters. Due to the 6v6 battles, every species having it's own unique trait, the ability to fuse monsters, and the (frankly ridiculous) about of item and talent point customization, you can build some absolutely bonkers teams.
You forgot about shin megami tensei games.

Honestly, performance aside Scarlet & Violet are fantastic, I wish they had voice acting though, it's nearly 2023.
